Olive oil
500g v2mince
3 teaspoons smoked paprika
2 teaspoons ground coriander
3 garlic cloves
1 long red chilli
½ red onion
Salt, to taste
Pepper, to taste

1 tin black beans
1 tin red kidney beans

¼ red cabbage

Measure out the spices, peel and finely chop the garlic cloves, finely dice the red onion, finely chop the chilli, halve the limes, roughly chop the coriander leaves and finely chop the stalks, drain and rinse the beans, large dice the avocado and shred the cabbage with a knife or a mandolin.

In a large frying pan over a high heat, drizzle olive oil.

When the oil is hot, add half the onion and all the garlic and half the chilli. Stir briefly for 30 seconds and then add the v2mince. Work the v2mince quickly in a pan until shredded – 1 to 2 mins.

Add the smoked paprika and ground coriander, plus salt and pepper to taste and continue to cook for 4-5 minutes, working the v2mince and stirring regularly. Remove from the heat and cover to keep warm.

In a large bowl add a handful of each cabbage and generously dress with fresh lime and a pinch of salt. Mix thoroughly to combine.

Add the beans, remaining chilli and onion, coriander and spiced v2mince. Stir to combine.

Transfer the bean and mince mix to a large serving bowl, garnish with avocado, coriander and extra lime wedges.
