Invest in some quality, fluffy pita bread for these wraps - you’ll want to mop up every last drop of these delicately spiced, deliciously rich v2 kofta wraps.
500g v2mince
2 tablespoons canola oil, plus extra for cooking
1/2 brown onion, grated
1/4 cup breadcrumbs, preferably panko
2 cloves garlic, crushed
2 tablespoons fresh coriander, chopped
2 teaspoons cumin
2 teaspoons coriander
2 teaspoons paprika
1 1/2 teaspoons ground cinnamon
1 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
1 cup Greek yoghurt, or other thick plain yoghurt of your choice
1 tablespoon extra virgin olive oil
1 clove of garlic, crushed
1 teaspoon cumin
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly cracked black pepper
1/2 bunch of fresh coriander, washed and roughly chopped, to garnish

Add Mince, grated onion to a large bowl. Add remaining Kofta ingredients and mix well with your hands.

With damp hands, divide the meat into 20-25g pieces and push and shape the meat onto small wooden lollypop sticks. Chill koftas until needed.

In a separate bowl, combine all the yoghurt sauce ingredients and leave in the fridge for at least 20 minutes for the flavour to develop (overnight is even better!).

Generously oil the koftas then pan-fry or grill on a BBQ on a medium-high heat for about 2-3 minutes each side, until browned.

Drizzle the koftas with the yogurt dressing and sprinkle with chopped coriander to garnish.
