Where would we be without pizza? Everybody has their favourite toppings - but we reckon this cheesy, salty combination of paprika-spiced v2mince, stringy mozzarella and Sicilian olives is a cracker. Buon appetito!
250g v2mince
Olive oil
1 tablespoon paprika
Salt and pepper
4 small pizza bases
1 cup passata
2 large fresh mozzarella balls, sliced
½ cup Sicilian green olives, pitted and sliced
½ red onion sliced
½ red capsicum, sliced
Chopped parsley

Preheat the oven to 250 degrees.

Heat olive oil in a large frypan over medium-high heat. Add v2mince and fry until browned and breaking apart with a wooden spoon. Add paprika and season with salt and pepper and stir through before taking off heat.

Spread each pizza base with passata and place 5 or 6 pieces of mozzarella on each. Top with sliced onions, capsicums, v2mince and olives.

Bake in the oven until the crust has browned and cheese is fully melted.

Garnish with chopped parsley… and a glass of vino on the side??
